Meribel’s Choc-Oatmeal Cookie Recipe

Mez’s Choc Oatmeal Cookie Recipe

You may know Meribel for her high energy and motivation in your sweaty workouts but what you probably didn’t know is that she is an ace baker.

“My most trusted Choc Oatmeal Cookies. These can be overcooked, undercooked, added to or mixed up as you please – but you can trust that they are always delicious.” Xx – Meribel

Trusty additions can include chopped almonds, desiccated coconut or a good spoonful of cocoa. Enjoy!

150g butter, softened
1 cup brown sugar
1 egg
2 tsp vanilla extract
1 cup plain flour
1 tsp baking powder
2 cups rolled oats
1 cup chocolate buttons (milk or dark)

Cream the butter and sugar until pale and smooth. Beat in the egg and vanilla extract. Then sift flour and baking powder and mix until smooth. Lastly add the oats and choc buttons and stir to combine. Roll the mixture into balls on a lined tray and bake at 180 degrees for 20 minutes, or until pale golden. Best enjoyed with a hot cup of tea!
