Georgia Shapero shares her simple and delicious Chicken Soup Recipe. Making something simple like a soup is a wonderful way to actively practice non-striving. Keep it simple, chuck in the ingredients, let life simmer. Nurture the body and soul with warmth and goodness.

 

Chicken Soup Recipe

This recipe is simple and measurement free on purpose! Play around, trust your gut and see what happens!

Method / Ingredients

In a large pot or Dutch Oven cover whole chicken with water and add…

  • Whole lemon (halved)
  • Zucchini, roughly chopped
  • Capsicum, roughly chopped
  • Onion , roughly chopped
  • Mushrooms, quartered 
  • Garlic, 4-5 cloves
  • Ginger, diced
  • Salt / Pepper 
  • Fennel Seeds 
  • Star Anise
  • Cassia Bark/Cinnamon Stick 
  • Coriander Seeds

Cover and simmer for 3-4 hours, remove the chicken from the pot, shred or roughly chop and return to soup.

Add:

  • Dill, chopped
  • Parsley, chopped
  • Spinach or kale, roughly chopped

Season with Salt /Pepper / Chilli Flakes if desired. Serve and enjoy!
